Pizza on a Baking Steel

In the original review of baking stones, steel stones weren’t covered because they weren’t yet available. So here’s a test run of the Baking Steel. Just like cast iron, the Baking Steel is virtually indestructible, heats up a bit quicker and conducts heat really well. It’s larger (14×16 inches), and rectangularly shaped, while the cast-iron Lodge product is round, and smaller, with more chance for stray ingredients to go overboard. That’s in favor of this alternative metal product.

This one’s a little thicker so that the crust would be nice and puffy.

  1. Our current favorite is a “Green and White” with local farmer’s cheese and a simple salad of Creasy Greens from the local market on top.

  2. My favorite pizza is whatever is in the refrig on an olive oil dough crust. WE are always assured of something tantalizing, but fresh asparagus is a must at this time of the year. Thanks for all your fabulous ideas!

  3. Our favorite pizza is Cheese Pizza topped with cooked chicken breast sliced thin, pizza seasoning, more cheese baked and topped with kettle .cooked potato chips before eating

  4. I LOVE thin and very crispy pizza with lots of cheese and spicy tomato sauce. My favorite toppings are ground pork, italian sausage, and pepperoni. I’m an american traditionalist. 🙂

  5. Have had my eye on a baking steel for awhile now. Love a great Margherita pizza! Or the crab rangoon pizza from my favorite pizza joint… still working on a copycat for that 🙂

  6. At our house, nobody cares what’s on top–it’s the crust that counts! Salty, savory, smoky, spicy, pungent, sweet, rich or light–any and all of those toppings are all good, but our thinnish, crispy, chewy crust from basic recipe AB5 makes homemade pizza SUPERB.

It’s also much healthier–not just the good ingredients (including half whole wheat content in the dough), but this is real food that takes a little effort and time to chew. We actually eat less and enjoy it much more than when scarfing down soft, tasteless takeout.

  7. My latest favorite is super thin crust (pre-baked, topped, then baked again) with homemade tomato sauce, mozzarella, spicy cherry peppers, Italian sausage, spinach and feta cheese.

  8. My favorite is either grandmother’s pizza (with tomatoes on top) or extra cheese with mushrooms and onions.

  9. I have always wanted to try making homemade pizza. These pictures make me want to try harder. We love white pizza – a Parmesan cheese sauce with spinach and artichokes. Mmmmmmmmm.

  10. Sounds crazy but one successful experimental pizza I made was with thin slices of beef tongue and thin slices of onion atop marinara sauce, with parm but no mozzarella.

  11. I tried the semolina dough recipe recently and thought that was super good. I’ve always got either a bucket of fresh dough or a bag of frozen 1/2 pound chunks of dough in my freezer ready to go.

  12. Favorite Pizza: Neapolitan crust, roasted tomatoes, roasted garlic with fresh buffalo mozz, spicy italian sausage and freshly grated parmesan.

  13. My favorite is a Margherita pizza with sliced Portabella mushrooms sautéed in olive with garlic added. Remove from oven & top with arugula dressed with olive oil & balsamic vinegar.

  14. Our go to crust recipe is using your cornmeal recipe-crust comes out crunchy and airy. My sister and I get together every Friday to make pizzas. Our fav is chicken, spinach, mushroom and toms with ranch Siracha sauce-for one -2nd pizza we do salami and olives with red sauce mixed with tapenade-we finish them off on the grill!!!l thanks

  15. I have a great tomato sauce recipe that has smoked paprika in it. I like every kind of pizza I’ve ever made with it, but one fav is goat cheese, sausage, onion, mushroom

  16. My favorite pizza is homemade: greek yogurt recipe crust brushed with garlic butter and topped with sundried tomatoes, spinach, and bacon.

  17. We LOVE a thin pizza with not too thin basil tomato sauce, mozz cheese topped pepperoni, Italian sausage, and Canadian bacon and TONS of veggies! Would love to do more with the flatbread pizzas too!

  18. I love any good crusty pizza with fresh ingredients. I would love to be able to make pizza at home. My kids love pizza!!

  19. Favorite pizza: spinach, tomato and goat cheese. Not greasy and so tasty! I love what the goat cheese brings!

I am in love with you bread method! The reason I got a stand mixer is to have an easy way to get pizza dough. I will never use my stand mixer for pizza dough again now that I have your dough method!

  20. ive made pizza out of many of the bread doughs from the first book. but my favorite is the super thin cruse i get when i use the italian low gluten flour. YUMMY. no fancy topping for me just cheese and sauce. 🙂

  21. My favorite pizza would have to be when I make a thin crust on my pizza stone with salami and onions. I love my pizza stone and my cast iron pizza pan, but I here that a baking steel is really the way to go. Glad to hear you had similar success with it!

  22. I love a really thin white pizza with herbs and a minimal layer of veggies. I made a cauliflower anchovy and bacon pizza the other day that was pretty great

  23. My favorite pizza is a Neopolitan style pizza with buffalo milk mozzarella, San Marazano tomato sauce, basil from my garden and a drizzle of olive oil.

  24. Margarita, my own style is my hands down favorite….sauce is homemade pesto, summer tomatoes and lots and lots of cheese!!!

  25. It’s a toss up for me! LOVE Canadian Bacon with mushrooms and Alfredo sauce, but sometimes I havr to have beef, bacon, and mushroom. Both SOOO good!!
