In the original review of baking stones, steel stones weren’t covered because they weren’t yet available. So here’s a test run of the Baking Steel. Just like cast iron, the Baking Steel is virtually indestructible, heats up a bit quicker and conducts heat really well. It’s larger (14×16 inches), and rectangularly shaped, while the cast-iron Lodge product is round, and smaller, with more chance for stray ingredients to go overboard. That’s in favor of this alternative metal product.

Here’s a breakfast pizza with prosciutto, cherry tomatoes, sautéed kale, soft goat cheese and fresh thyme, baked on our olive oil dough with an egg cracked on top.

This one’s a little thicker so that the crust would be nice and puffy.

This is a traditional Margherita pizza with homemade tomato sauce, mozzarella and fresh basil.

  1. My favorite pizza is a Reuben. Thousand island dressing, sauerkraut, corned beef, Swiss cheese and mozzarella. Optional ingredient caraway seeds

  2. I love all kinds of pizza. One favorite is chicken, spinach and mushroom. Fresh ingredients and a thin crust make pizza stand out for me.

  3. Any pizza my husband makes on the baking steel is my favorite at the time! Fabulous, creative pizzas every time; for example, venison meatball. Yum!!

  4. I love making home made pizza. My favorite is NY Style thin crust. Using the right dough and getting a hot oven is essential for it. My second fave is Grandma Pie. Big hit in my family.

  5. The very first time I made pizza was on a cast iron ‘stone’ and it was a disaster. It took a while for me to learn how to use one properly. There was no “Artisan Bread’ cookbooks back then. You have made things so much easier. Thanks from my family and me.

  6. My favorite pizza that isn’t home made is at Buddy’s in the Detroit area. It’s a Greek Pizza in a deep cake like crust with red onions, basil, light on the cheese (at least for me) and greek dressing as a dipping sauce. I had some last night!

  7. As a longtime fan and owner of all of your other books, I would be giddy-thrilled with this book and a baking steel, which I was just reading about, thanks to Instagram!
    My favorite pizza is a lovely white pizza with a “sauce” of blended artichoke hearts and feta, and topped with caramelized onions, and lovely charred red peppers. Sprinkled with crushed red pepper flakes, and topped with a few sprigs of arugula just before serving, this is a delish delight with a burst of fresh flavor for spring.

  8. Favorite pizza is sausage/artichoke hearts/mushrooms/green peppers/onion made with your dough. I prefer tomato paste to sauce. Cheese is whatever we have. We’ve pretty much stopped buying pizza out.

  9. I think Margherita is my current favorite, but I am learning to love no-cheese pizzas, with just red sauce, tomatoes, and of course the great crust.

  10. Hummm, bbq chicken, or ham/pineapple, or fig and gorgonzola…this is hard!!!

    After making 2 loaves of sourdough so far in my DO that came out great…I think you’ve got this newbie hooked on bread! Boy, would I love to try that steel stone! Thanks for giving us all a chance at it. 🙂

  12. My favorite pizza is paper-thin sliced raw potato with rosemary, with a thin crust. It bakes through in nothing flat at high heat and is sooooo tasty.

  13. My favorite pizza is chicken, spinach & artichoke. Then add thin sliced fresh tomatoes after its cooked.

  16. It’s almost as hard to pick out a favorite pizza as it is to pick out my favorite book. How do I pick just one? I’ve made my own pizza for years, first on a stone and more recently on a cast iron pan. I make my crust with semolina flour and love the flavor and the crispness.

    This time of year, or maybe in a month or so, one of my favorite pizzas is asparagus, fresh from the farmers’ market, with chives from my garden, and a bit of smoked gouda. Although mushroom with fresh rosemary and smoked gouda is good any time of year. No sauce on either of them.

  17. My favorite pizza is whole grain crust, spread fig jam over the half baked crust. Then sprinkle with shreds of prosciutto and crumbled honey goat cheese. Drizzle honey over all. Bake until golden. When out of the oven, top with arugula that you’ve already tossed with (don’t judge…it’s delicious) Ken’s, honey balsamic dressing. So, so good!! Try it!

  18. My favorite is usually a pizza margherita, but for a special taste there’s nothing like your ancient Greco-Roman pizza with feta, honey, and sesame seeds. It’s amazing!

  19. I love whole wheat with bacon, pineapple and jalapeños. I use the basic whole wheat dough from Healthy Bread in Five Minutes a Day.

  20. Ahhhh…pizza, my favorite food group. My favorite pizza is grilled margharita with fresh basil and fresh mozzarella in big slices. So good!
